Description

The Ultimate Open Fire and Braai Book is the next step for barbecue enthusiasts. Instead of using high-tech equipment, go back - completely old skool - to the basics. Whether you're going to light fires in a hole in the ground, use a simple fire bowl or just a braai or a fire ring. With good wood and simple accessories such as skewers, cast iron pans and grates, you can make all the dishes in this book. The 60 varied recipes in this book are based on using those accessories. We start with grilling meat and fish the braai, asado and churras comanier. These are South American skewers and clamps right next to the fire. Large steaks are cut directly from the skewer onto your plate. Whole fish pull buttery soft from the clamp and pork belly becomes super crispy.

Besides, the plancha is much more versatile than you think; make omelets, tortillas, thick grilled sandwiches, challenging vegetables, Mexican fajitas and smash burgers. Or go for flavorful stews, clam casseroles and soups prepared in a potjiekos or Dutch oven. We also use these cast iron pans for bread, sweet desserts and fried snacks. Finally, a nice cup of wood-fired coffee, while we contentedly enjoy the last flames in an easy chair.
