Great all-rounder with light, spicy but neutral smoke flavor. Applicable with all types of meat, colors fish nicely reddish to brown. Chips are suitable for hot smoking in your charcoal or gas BBQ. Use a smoker box or throw a handful (possibly soaked in liquid) of chips into the charcoal.
